Eating well to me is more than simply tossing together a bowl of greens it is a state of mind, of emotional and mental well being. It is gentle walks down the path of my Granny’s garden, in spirit once again picking fresh vegetables and snapping beans with her.
Slow smiles that unintentionally beam when filling an old painted bowl with apple slices, recalling lazy summers under an oak tree.
Digging row upon row in the dirt with my dad and my boys, passing on a family farming tradition albeit smaller in scale in the suburbs along the Carolina coast.
A sunny yolk nestled over fresh greens, sprinkled with crispy pancetta and a nod to the low country with a drizzle of creamy jazzed up dressing. A salad bowl holds more than the nutrients and daily allowances required, it holds the past along with the future.

Sunny Side Up Spinach Salad with Artichokes Hearts, Pancetta Crisps
2 ounces pancetta, diced
1/4 teaspoon garlic, minced
1 tablespoon olive oil
1 (9oz) bag Dole Spinach
6 ounces artichoke hearts, drained
4-6 whole eggs, (cooked to your liking)
Directions:
In a skillet over medium high heat, drizzle the olive oil and saute the pancetta with the garlic until crisp. Set aside to cool.
In separate plates/bowls build your salad with the spinach, artichoke hearts and pancetta.
Cook your eggs sunny side up or to your liking. Slat and pepper to taste then add the eggs on top of the salad.
Serve with Creamy Creole Dressing and enjoy!
Creamy Creole Dressing
1/4 cup olive oil
1/4 cup Greek yogurt
2 tablespoons tomato juice
2 tablespoons Creole or whole grain mustard
2 teaspoons red wine vinegar
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
1/2 teaspoon Creole seasoning
1/4 teaspoon thyme leaves, dry
Directions:
In a small bowl whisk all of the ingredients together.
Serve with salads or use as a dip!

My favorite salad is a Napa Salad consisting of Ramen noodles, sliced toasted almonds, toasted sesame seeds, Napa cabbage, onion and a simple slaw vinaigrette containing the seasoning packets of the ramen noodles, oil,spplecider vinegar, and sugar…..delish stuff for sure….and have I told you lately how smart you are……that’s really not a question, it’s a fact

I like a salad of mixed greens, spinach leaves, oranges, purple onions, avocado, rasins and almonds with Trader Joe’s spicy peanut dressing.

I love spinach salad w/grilled chicken, bleu cheese crumbles, and raspberry vinagrette. Gotta have other chopped veggies too–carrots, cherry tomatoes (sliced fresh tomatoes in summer), green onions and bell pepper!
Never thought of having egg any way but hard boiled on a salad. (Guess that’s a “Southern thing!”) :)

I love a salad at a resturaunt close to my house ! It has figs stuffed with honeyed walnuts, topped with walnuts, thinly sliced apples and pecorino romano! So delish!

My favorite salad uses spring mix topped with warm roasted beets and carrots with some feta cheese sprinkled on top.

Gorgeous, and sounds totally delicious! I love perfectly runny eggs on anything. My favorite salad of the moment puts roasted squash and fennel over wilted spinach with a creamy herb-tahini dressing. SO yum. But adding an egg to that would probably make it even better!
