Family Style Mediterranean Salad

The warm spring air right now is a gloriously tolerable 80 degrees. A lite cardigan in the morning, shorts by lunchtime and back into the cardigan for that evening swing in the hammock watching the sun set through the Spanish moss and old oaks.

However, the humidity will be upon us much sooner than Surferboy would care for. He’s still not acclimated to our southern climate, I now it’s been 26 years you would think he was at least a quarter southern by now, but sadly not as of yet. Until that unlikely day miraculously evolves, I try to come up with plenty of salads in the summer to keep us all satisfied while meeting all four-food groups, which is important to me with two growing groms. This quickly tossed together salad happens to be a family favorite due to its serve yourself ease. All of us gathered around one platter chatting about our day while we build our plate somehow feels slightly more relaxed than the usual meal.

The best part about this salad is that every aspect, other than the dressing, is ready-made at the grocery store just waiting for you to put it together.

Freshly sliced deli meats along with spicy kalamata olive and hot pepper mix.

A variety of savory baby greens surrounded by chopped veggies and rich feta cheese.

Let us not forget some tantalizing baked bread. Typically, I go for the olive loaf… MmmMmm! There’s times when DS is running late that I text him, threatening to eat every last, itty bitty, flaky morsel. That has him home in a flash! Whether you are in a rush, trying to beat the heat or just love salads like us this one is a delight to share while recounting adventures of school and surfing with one another.

Family Style Mediterranean Salad~Serves Four

Ingredients:

1 package baby greens blend

1/2 pound turkey, sliced

12 slices hard salami

1 cup English cucumbers, rough cut

2 Roma tomatoes, rough cut (approx. 1 cup)

1 cup feta cheese

1 cup kalamata olive hot pepper mix

1 cup extra virgin olive oil

2/3 cup aged balsamic vinegar

1  garlic clove, minced

1 tablespoon dried oregano

1 1/2 tablespoons dried basil

kosher salt and cracked pepper to taste.

Fresh baked olive loaf or focaccia bread.

Directions:

Assemble the proteins along with the greens and vegetables on a large platter. Place the kalamata olive hot pepper mix in a bowl. Place the bread sliced or torn in big pieces in a basket.

In a bowl mix the olive oil, balsamic vinegar, garlic, basil, oregano, kosher salt and pepper. Pour a small amount into bowl as dip for the bread, reserve the remainder for salad dressing.

Eat family style and enjoy!

This is my ideal meal!! I love all of the flavors and salty components!!!!

This is truly my favorite way to eat and it reminds me of plates my mom or grandpa would put on the table for lunch or dinner on those warm and lazy type of days. Give me bread, salami and all those fixins and I am happy!!
